Vietnamese Rice Raps

rice paper
mint leaves
lettuce / salad leaves
cucumber
sambal olec
cooked shrimps and/or chicken and/or beef
water

Moisten rice paper. Put salad, cucumber, pieces of mint leaves, sambal olec and shrimps/chicken/beef on paper. Wrap.

Dimp into oyster, soya or any other sauce that might fit. Enjoy!

Knöpfli

300 g flour
1 tbs salt
2 eggs
1 1/2 cups milk

Mix all ingredients and stear well until thick liquid dough is smooth and builds bubbles. Bring water to boil and pour junks of mixture slightly into the boiling water. Cook until junks float. Serve like pasta...

Tip for serving. Put in pan with butter, add table cream to it chopped onion and spice with provencal herbs. Before taking from stove add cheese. Enjoy!!

Easy Risotto

1 cup rice (preferably risotto rice)
1 onion
1 can champion mushroom
sausages
parmesan (grated)
bouillon dissolved in water
(optionally white wine for better taste)

Chop onion into small pieces. Fry in pan with margerine (or butter) and rice until rice looks glassy. Then deglaze with bouillon water. Boil and keep adding bouillon water (and wine) while stearing. Add mushroom and sausages (chopped in slices). Keep boiling, stearing and adding bouillon water or wine until ready (will take at least 30 minutes till rice is becomes soft). Before taking pan from stove add parmesan cheese. Serve with fresh grated parmesan cheese on top and pepper.

Ingredients can vary!!!

Custard Cornbread

1 1/2 cups cornmeal
1 cup all purpose flour
1/2 cup sugar
2 cups milk
2 eggs
1 tsp. baking soda
1 tsp. salt
2 tbsp. butter

In large mixer bowl, combine all ingredients. Beat until smooth.

Bake at 350 degrees for 30 to 40 minutes. Serve warm.

Pumpkin/Potatoe Tätschli

1 egg
pumpkin and/or potatoes grated
onion chopped in small pieces
flour

Mix ingridents. Spice as wished and fry in pan until ready.

Philadelphia OREO Cheesecake

1 pkg (550 g) OREO Cookies
1/4 cup melted butter
4 pkg (250 g each) Cream Cheese
1 cup suger
1 tsp. vanilla
1 cup sour cream
4 eggs

Preheat oven to 325°F (160°C). Place 30 of the cookies in plastic bag. Flatten and seal bag. Crush cookies. Place crumbs in medium bowl. Add butter and mix well. Press firmly onto bottom of baking pan.
Beat cream cheese, sugar and vanilla in large bowl (blender). Add sour cream and mix well. Add eggs, one at a time, beating just until blended after each addiction. Chop remaining 15 cookies. Gently stir 1 1/2 cups of the chopped cookies into cheesecake batter. pour over curst. Sprinkle with remaining chopped cookies.

Bake 45 minutes or until centre is almost set. Cool.

Ramona's Butterzopf

20 g backing powder
2.5 dl milk
500 g (4 1/4 cups) flour
1 tsp sugar
1 tsp salt
1 egg
80 g (1/3 cup) soft butter

put everything together and knead to a dough. Let do raise for 1 hour. Plait and put in cold stove. Bake at 200°C (390°F) 30 - 40 minutes.

Easy Tuna Casserole

1 can tuna
250 g egg noodles (or other pasta)
1 can mashroom soup

Boil noodles. When cooked, add crushed tuna and can of mushroom soup. Mix it all up and let it cook for about 5 more minutes. If wished add grated cheese.

Pumpkin Muffin

2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 scant teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 can (15 to 16 ounces) pumpkin puree
1/3 cup melted butter
1/2 cup evaporated milk or half-and-half
1/2 cup brown sugar, packed
1/4 cup granulated sugar
2 large eggs, beaten
1 teaspoon vanilla
cinnamon-sugar, optional

In a large bowl combine flour, baking powder, baking soda, cinnamon, and salt. Stir to blend In separate bowl, combine pumpkin, melted butter, milk or half-and-half, the beaten eggs, sugars, and vanilla; mix until blended.

Stir pumpkin mixture into the dry ingredients until moistened. Line 12-cup muffin tin with paper liners or grease well and dust with flour. Fill the about 3/4-full with the pumpkin muffins batter, sprinkle with cinnamon-sugar if desired, and bake at 375°F (190°C) for 20 to 25 minutes.

Älpnermacronen (Macaroni des Alpes)

potatoes
macaroni (large)
onion
cream
cheese (preferably Swiss cheese like Sbrinz but mild cheddar works too)

Peel, wash and chop patatoes in squares. Bring water to boil and add patatoes. Cook for about 10 minutes. Add macaroni to patatoes. Cut onion in rings and fry together with oil until almost black. Take patatoes and macaroni from stove, drain and put into a big bowl. Pour onion rings over it, but let a little rest stay in pan. Put cream in pan (where onions were fried) and bring to bowl. Turn down heat and spice cream with Swiss spice (Aromat) or salt and pepper. Cook for another 5 minutes or so. Meanwhile add graded cheese to maccaroni, then pour creamsauce over it.
Serve with applesauce.

Pumpkin Pie

1 1/4 cups pumpkin puree, canned or fresh
3/4 cup sugar
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon all-purpose flour
2 eggs, lightly beaten
1 cup cream
1 unbaked pastry shell (9-inch)

Combine pumpkin, sugar, salt, spices, and flour in a medium mixing bowl. Add eggs; mix well. Add cream and mix well. Pour into pastry-lined pie pan. Bake at 400°F (200°C) for 15 minutes; reduce heat to 350°F (175°C) and bake about 35 minutes longer, or until center is set.

Pumpkin Soup

Fresh Pumpkin
Bouillon
Curry
Cream

Cook pumpkin in bouillon (with water) until soft. Blend. Add curry. Let simmer for awhile. Put individual servings in bowl and add cream.

Hacktätschli (Meat Balls)

500 g minced beef
3 slices toas bread
2 eggs
parsley
chive
1 onion

Soak toast bread in milk for at least 30 minutes. Chop onion finely. Put toast, onion, egg, parsley and chive together with beef in a bowl and spice it (salt and pepper or at will) and mix well.

Knead little cubes, put in pan and fry well.

Sauce (optional)
Deglace cubes with red wine and bouillon. Add 2 tbsp of brown gravy and cook for another 30 minutes.

Serve with mashed patatoes and vegetables.

Apple Pie Filling

1 pie shell or pie dough
1 egg
8 tbsp sugar
8 tbsp flour
1 bag vanilla sugar
cream
apples

Peel apples. Chop in slices or grate. Put into pie shell.

Beat egg in a bowl. Add suger, flour, vanilla suger while stearing. Keep stearing and add cream until everything becomes liquid. Pour over apple.

Bake for 25 - 30 minutes at 350°F (175°C).

Easy Apple Pie

1 cup table cream
3/4 cup sugar
1 package vanilla sugar
4 eggs
2 cups flour
1/2 tbsp backing powder
1/2 tsp salt

Mix everything except apples and put on pie form. Peel apples and chop in slices. Add on the top and press slightly onto dough.

Bake at 390°F (200°C) 15 to 20 minutes.

Apple Muffins

1/2 cup milk
1/4 cup oil
1 egg
1 1/2 cups flour
1/2 cup sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
3 apples, peeled and grated

Mix milk, oil and egg in one bowl. In another bowl mix flour, sugar, baking powder, salt cinnamon. Add to other mixture. Add grated aples, mix.

Pour into greased muffin tin. Bake at 350° F (175° C) for 25 minutes.
